LOCAL ICE CREAM
PRODUCTION

Pingouin captures about 30% of the Moroccan market despite the low consumption of ice cream in Morocco.

We have a diversified product portfolio and manufacture, import and market ice creams and gelato under the Pingouin, Froneri, Milka and Oreo brands in Morocco. We also produce mixes for certain McDonald’s products according to strict specifications. Our factory also meets the needs of local renowned ice cream shops, restaurants, hotels and fast food outlets.

We follow a quality assurance process based on international standards. Our manufacturing processes are controlled and audited several times a year by our partners and by certification bodies in order to meet the requirements of HACCP (Hazard Analysis Critical Control Point).

With over half a century of experience in the food industry, specializing in the manufacture of ice cream and gelato, our manufacturing processes respect both safety standards and the ingredients used.

HOW IS ICE CREAM
MADE?

Mixing & Preparation

Selected raw materials are dosed according to our own recipes and heated in the mixing tanks to obtain ‘the mix’ that makes our ice creams unique.

Pasteurization & Homogenization

The mix is pasteurized and homogenized before freezing. Pingouin has an in-house laboratory that performs bacteriology tests every 10 hours by taking 5 samples of each mix prepared.
In addition, Pingouin works with an external laboratory that is accredited to carry out the tests in accordance with the 17025 standard. The mix is then homogenized and cooled.

Maturation & Overrun

The mix is matured for several hours to allow the stabilizer to take effect and prevent the formation of large ice crystals. From the maturation tanks, the mix is sent to the continuous freezer where air is whipped into the mix. This is the overrun, which is carried out simultaneously with the freezing and where micro-bubbles of air are incorporated into the mix to make the ice cream smooth, light and creamy.

Extrusion & Packaging

The mix leaves the freezer and the ice cream is packed in sticks, cones or boxes. The products then pass through a hardening tunnel where the final freezing takes place.

Storage and Shipping

The ice creams are packed on the line and then stored in the cold chambers until they are dispatched, by refrigerated trucks, to the points of sale.

DISTRIBUTION

In addition to manufacturing and with a view to satisfying the cravings of all our consumers, we market and import some of the best international brands, such as Milka, Toblerone and Oreo.

Our direct distribution business ensures that our ice creams are shipped to all parts of the Kingdom. We are backed by an important distribution and marketing network. To respond to the desires of our consumers, we rely on the commercial agencies of our Group which guarantee extensive distribution in the best conditions.
